FreshABQ began as an idea in Chef Jon Young's mind after watching the food truck revolution spread across this nation. He wanted to offer people amazing food, but he wanted to do it with style. The idea took shape when he and his wife Melissa Young found the old KOB News 1955 Twin Motor Coach bus just sitting outside Socorro, New Mexico, unused and unloved.
With a vision few could have seen and the skill set to make it happen, the Youngs jumped head-first into their new adventure. They purchased that vintage bus, relocated it to Corrales and began a painstaking restoration. As Jon and Melissa began to clean out the bus, many old documents came to light. They discovered the bus's first life was as a Highway Post Office in Florida. After retiring from the USPS in the 60’s, it was purchased by Hubble Broadcasting in Ohio and sent it to New Mexico to become the KOB 4 News crew bus.
The old touring bus has transformed from being a rusty, hollowed-out shell to a fine dining restaurant-on-wheels with seating for twelve. Themed after the famous Orient Express, the old KOB News bus will now take its passengers on tantalizing food adventures!
Husband and wife team, Chef Jon Young and Melissa Young, are at the heart of Fresh, A Mobile Bistro.
Chef, artist and all-around renaissance man, Jon's passion is creating memorable meals that are as much a delight to the eye as they are to taste. From throwing pizza dough at the young age of fourteen, to roasting duck as a mature chef, Jon focuses on fresh food made with heart.
A native New Mexican, Melissa manages operations for Fresh, Mobile Bistro LLC. Her background as an entrepreneur, along with her leadership skills and unstoppable good cheer, blend to make Fresh a wonderful experience.
